What a turning peel is for

One job: lifting part of a cooking pizza and rotating it, without dragging it across the surface. That matters when your heat source is strongly one-sided - a wood or gas oven with a flame up one wall, or a grill with coals banked to a side - because the edge nearest the flame chars in 30 seconds while the far edge is still pale.

The design follows from that. A small head so you lift part of the pizza rather than all of it, a long shaft so your hand stays out of a 900 F mouth, and a thin tapered edge so it gets underneath a base that has only just set.

Does a domestic oven need one? Usually not.

This is the part turning-peel roundups tend to leave out. A domestic oven heats from a large element with the cabinet at a fairly uniform temperature, and the whole bake is six to ten minutes rather than 90 seconds. Most home pizzas do not need turning at all, and the ones that do can be turned with a large peel or a pair of tongs.

The 3-minute test

Open the oven three minutes into a bake and look at the edge

If one side of the cornicione is visibly darker than the other, your oven has a hot side and turning will help. If the color is even, a turning peel will sit in a drawer.

Head width: 7 inches or 9

Seven inches lifts a portion of a 12-inch pizza, which is what you want for a quarter turn - the rest of the base stays on the surface and acts as a pivot. Nine inches lifts most of a 12-inch pizza clear, which is better for moving it and slightly clumsier for turning it.

Both published Ooni turning peels weigh 1 lb, which means the wider one is achieving its extra area by being thinner: 0.6 inches at the head against 0.8. That thinner blade is a genuine advantage for sliding under a base that has only just set.

Width also has to clear the oven mouth at an angle, because you enter tilted. Nine inches plus wrist angle is a lot to get through a small portable-oven opening.

The technique, so the tool is not the limiting factor

Wait until the base has set - about two minutes in a domestic oven, 30 seconds in a 900 F one. Turning before that drags dough. Slide the head under one edge at a shallow angle, lift an inch, rotate the shaft in your fingers rather than swinging your whole arm, and set it down. Quarter turns, not half turns; you will do two or three across a bake.

What we did not do

Because dedicated turning peels are a small category and most of it publishes nothing. What is a turning peel for?
Lifting and rotating a pizza that is already cooking, without dragging it. It matters most where the heat is strongly one-sided - a wood or gas oven with a flame up one wall, or a grill with the coals banked.
Do I need a turning peel for a home oven?
Usually not. A domestic oven heats fairly evenly over a six to ten minute bake. Check first: three minutes in, look at the edge. Even color means you do not need one.
7 inch or 9 inch turning peel?
Seven for turning, because lifting only part of the pizza leaves the rest as a pivot. Nine for lifting a whole 12-inch pizza clear - and it is also the thinner blade, which slides under a newly set base more easily.
Can I turn a pizza with tongs?
Yes, and plenty of people do. Tongs grip the cornicione and rotate it. They will mark the edge slightly, and they are much harder to use safely at the back of a deep oven, which is what the long shaft on a turning peel is really solving.
