What to Use Instead of a Pizza Peel

Three of the substitutes people suggest work well. One of them works better than a cheap peel. And one of them cannot work, for a reason worth understanding.

What a peel actually does, in three properties

Before ranking substitutes it is worth being precise about the job, because it explains why some kitchen objects work and others cannot. A peel needs exactly three things.

A thin leading edge. The edge has to get under a soft base without lifting or tearing it, and it has to leave the pizza behind cleanly on the way out. A quarter of an inch of blunt edge is enough to catch dough.

A low-friction top surface. The base has to slide, not grip. Wood and wood-composite hold a dusting of flour or semolina in the grain; smooth steel holds none, which is why bare metal is worse to launch from than wood.

Rigidity, and no rim at the front. Any lip along the leading edge means the pizza has to be lifted over it, and lifting a dressed base is how it folds.

Everything below is graded against those three. Nothing else about a peel matters for the launch itself.

The substitutes, ranked

1. A rimless or upside-down baking sheet. The best free option in most kitchens. A flat sheet has a genuinely thin edge, it is rigid, and inverted it presents an unbroken surface with no lip in the way. Dust it as you would a peel. Its weakness is that it is smooth metal, so the flour layer is doing all the work - check the base is still moving before you go near the oven.

2. A thin cutting board. Wood or bamboo, and the thinner the better at the leading edge. Board grain holds semolina well, which makes the release more forgiving than sheet metal. Thick end-grain blocks are the problem case: a one-inch edge does not slide under anything, so it works only as a build-and-slide platform rather than as something you scoop with.

3. Parchment paper, on almost any flat carrier. The method that removes the skill from the launch entirely - build on parchment, carry it on a board or sheet, and slide paper and pizza together onto the stone. See the caveat below, because parchment has a published temperature limit and pizza is baked above it.

4. The lid of a pizza box, or stiff clean cardboard. Genuinely effective: thin edge, rigid enough, and the surface takes flour well. Cut it to a size you can handle, use a clean piece rather than the one that came under a delivery pizza, and treat it as disposable.

5. A rimmed baking tray, used the right way up. Last, and only if there is nothing else. The rim means you cannot slide the pizza off - you have to tip it, which usually means a folded pizza. If this is your only option, use parchment.

What does not work: a plate. A dinner plate has a curved rim, a small diameter and no straight edge anywhere. There is no motion that gets a dressed base off it and onto a hot surface flat. This is the one suggestion that appears constantly and is simply wrong.

Everything a peel is doing can be done by a flat, rigid, thin-edged object with flour on it. The peel is just the version shaped for the job.

The parchment method, and its one honest caveat

Parchment is the highest-success-rate launch available to a beginner, and it is worth knowing exactly how to use it and what its limit is.

How. Stretch the base directly onto a parchment sheet cut roughly to the pizza size. Dress it there. Slide a board, tray or cardboard under the paper, line the front edge up with the far side of your stone, and pull the carrier out from under the paper. Paper and pizza land together. After two to three minutes the base has set and you can pull the parchment out from under the pizza with tongs and let it finish on bare stone.

The caveat. Reynolds publishes its parchment as oven safe up to 425 F, and home pizza is baked at 500 to 550 F. Above the rated temperature parchment darkens, goes brittle and can scorch at the edges - it does not catch fire in normal use, but it is being used past what the maker states. Pulling it out after the first few minutes is the sensible middle ground, and it is also better for the crust, because paper between the base and the stone is an insulating layer exactly where you want conduction.

Home pizza runs at 500 to 550 F. Parchment is the easiest launch there is, and it is being used above its rating whenever it is used for pizza. Pull it after two to three minutes.

Do not substitute wax paper. It is a different product with a wax coating that melts and smokes in an oven, and the resemblance to parchment is superficial.

Semolina is the other half of every one of these

Whatever you launch from, the release layer matters as much as the carrier. Coarse semolina rolls under the base like tiny ball bearings and tolerates oven heat without burning quickly. Flour alone works but hydrates into paste faster, which is the mechanism behind most stuck launches - covered in full in how to launch a pizza.

The habit that saves more improvised launches than any other: shake the carrier before you go anywhere near the oven. If the base does not move freely, lift an edge and throw more semolina underneath. A base that will not slide on the counter will not slide into the oven.

Speed matters more than equipment

The single biggest cause of a failed launch is time. Moisture from the dough wets the flour underneath, the flour turns to paste, and the paste glues the base down. That process runs on a clock measured in minutes, and it does not care what the base is sitting on.

So with any substitute: stretch, transfer, dress fast, launch. Sauce and cheese go on in under a minute and the pizza goes straight in. A cheap peel used slowly performs worse than a piece of cardboard used quickly.

When to stop improvising

A substitute is genuinely fine for occasional pizza. Three things push you toward the real thing.

Size. Household flat objects run out at about 12 inches of usable width. If you are making 14-inch pizzas, nothing in a normal kitchen carries one without overhang, and an overhanging base catches on the way in. The sizing rules are in the peel size guide.

Heat. A cutting board is fine going in. It is no use at all for turning or retrieving a pizza from a 500 F oven, and cardboard is worse. If you are also using the carrier to get the pizza back out, you want metal.

Frequency. Weekly pizza with an improvised launch is a lot of small anxieties. Can I use a baking sheet as a pizza peel?
Yes, and it is the best free substitute. Turn it upside down so there is no rim in the way, dust it with semolina, and check the base slides before you go near the oven. Smooth metal holds less flour than wood, so be generous.
Can I put parchment paper directly on a pizza stone?
You can, and it is the most reliable beginner launch. Reynolds rates its parchment to 425 F and pizza bakes at 500 to 550, so pull the paper out with tongs after two to three minutes once the base has set. That also lets the crust finish on bare stone, which is better for it.
Will cardboard catch fire in the oven?
Not in the way people fear during a launch that lasts a couple of seconds - the cardboard never enters the oven, it stays in your hand. Do not leave it in there, and do not use the greasy box a delivery came in.
Why does my pizza stick to whatever I launch from?
Almost always time rather than the carrier. Dough moisture turns the flour underneath into paste within a few minutes. Dress fast, use coarse semolina rather than flour alone, and shake the carrier to confirm movement before you commit.
Is a cheap peel better than a good substitute?
Only for size and for retrieval. A well-floured inverted baking sheet launches a 12-inch pizza as well as most wooden peels. What it cannot do is reach into a hot oven to turn or take out a pizza, which is where metal earns its place.
