Pizza Stones for Ooni and Portable Ovens

Replacement floors are one of the few stone purchases where the fitment matters more than the material. Here are the published numbers, model by model.

What a replacement floor actually has to match

A portable oven floor is not a stone you choose on merit. It is a part, and it has to match three things: the footprint of the oven cavity, the thickness the oven was designed around, and the material that survives being flame-heated from one side. Get the first two wrong and the stone either does not sit flat or it sits proud and fouls the door.

The good news is that this is one of the very few corners of the stone market where the numbers are published properly. Ooni states dimensions to the millimeter for every stone it sells, which is more than most kitchen stone makers manage.

The Karu 12 page is worth reading closely, because it states a thickness of 0.6 inches (1.5 cm) in one place and gives 0.5 inches in its unboxed dimensions in another. When a maker contradicts itself, measure the stone you are replacing before ordering.

The published weight that confirms what these stones are

That 6.7 lb figure on the Karu 12 stone is more useful than it looks. Run it against the published 13.5 by 13.5 by 0.6 inch dimensions and the effective density comes out at about 1,700 kg/m3.

A third independent stone landing on the same figure. The Old Stone 16-inch round derives 1,703 and the Unicook 15 by 12 derives 1,692, against a textbook dense-cordierite figure of 2,000 to 2,200.

Three stones from three unrelated makers, all landing within one percent of each other and all a fifth below the textbook density for a dense cordierite body. That gap is porosity, and it is the same finding the pizza stone roundup is built on. It also means these floors store about a fifth less heat than their dimensions suggest, which matters more in a 900 F oven turning pizzas in 60 seconds than it does in a kitchen.

Why the preheat arithmetic on this site does not transfer

Everywhere else here we compute preheat times from mass and a surface heat transfer coefficient of 20 W/m2.K, which describes a domestic oven cabinet: radiant walls, still air, no flame. A portable oven is a completely different thermal environment. A gas burner or a wood fire plays directly over the stone, the flame is far hotter than any oven element, and the transfer coefficient is neither 20 nor knowable from anything published.

So we do not publish a computed preheat time for these. Ooni publishes 20 minutes for the Koda 16 and that is the number to use. What our model does still tell you is the ranking: a 15 mm floor holds meaningfully more heat than a 10 mm one, which is why the 12-inch boards recover more slowly between back-to-back pizzas than the 16-inch floors do.

Why these stones crack, and what to do differently

Everything in why pizza stones crack applies here with the volume turned up. Three habits cause most portable-oven floor failures.

Full flame from cold. Lighting a gas oven at maximum with a room-temperature stone puts several hundred degrees across the thickness of the floor within a minute. Start low, give it a few minutes, then bring it up.

Frozen or very wet food onto a hot floor. A 750 F stone and a frozen base is the steepest local gradient you can produce on purpose.

Cleaning a hot stone. Never introduce water. Brush the floor when it is cold, and burn residues off by running the oven hot with the stone empty - the method in the cleaning guide, which works better at 900 F than it ever does in a kitchen.

Third-party stones, and the fitment gamble

Replacement floors from other makers exist for every popular model and they are substantially cheaper. Two things to check before buying one, both of which the listing often does not answer.

Does it name cordierite? The distinction between cordierite and an unnamed clay body is the difference between a stone with published low thermal expansion and one that has published nothing, and it is covered in full in cordierite versus ceramic. In a flame-fired oven it matters more than anywhere else on this site.

Does it publish the thickness? A 10 mm stone in a slot designed for 15 mm sits low, changes the gap between the floor and the flame, and is not the oven the maker designed. That is not automatically fatal, but it is a change you should make knowingly.

The stone you already own does not belong in there

Two directions, both bad. A domestic kitchen stone in a portable oven is usually the wrong footprint, is often thinner, and has never seen a flame on one face. And a portable oven floor in a kitchen oven is mostly a waste: the Koda 16 stone is 20.4 inches wide, which is wider than a standard domestic rack, and it is shaped for an oven body rather than for a rack.

What size is the Ooni Koda 16 stone?
Ooni publishes 20.4 x 16.7 x 0.6 inches (520 x 425 x 15 mm) in cordierite. That 0.6 inch thickness is the same as the Karu 16 stones and thicker than the 10 mm boards used in the 12-inch models.
Can I use an Ooni stone in my kitchen oven?
Only if it fits your rack, and the 16-inch models mostly do not - the Koda 16 floor is 20.4 inches wide. A stone sized to a domestic rack will serve you better and usually costs less.
Is a third-party replacement stone safe to use?
If it names cordierite and publishes a thickness that matches the original, it is a reasonable buy. If it names neither, you are gambling on the material property that decides whether a flame-heated stone survives.
How long should I preheat a portable oven?
Use the maker's figure - Ooni publishes 20 minutes for the Koda 16. The preheat model we use for kitchen ovens assumes still air and radiant walls, and a flame-fired oven is not that, so we do not publish a computed time for these.
Why did my portable oven stone crack on the first use?
Almost always full flame from cold. The floor takes direct flame on its top face while the underside is still at air temperature, and that gradient is far steeper than anything a kitchen oven produces. Start low and bring it up over several minutes.
