Portable Pizza Oven Accessories

A 900 F oven changes which accessories matter. The turning peel goes from optional to essential, and the thermometer you own probably cannot read the floor.

What changes at 900 F

A portable gas or wood-fired oven runs three to four hundred degrees hotter than a domestic one and bakes a pizza in 60 to 90 seconds rather than six to nine minutes. Three consequences reshape the accessory list.

The heat is one-sided. A flame up one wall means the near edge chars in 30 seconds while the far edge is pale. Turning stops being optional.

There is no time to correct anything. A pizza that lands badly cannot be nudged - the bake is over before you have decided what to do.

The floor is above the range of most instruments. A common infrared thermometer stops at 1022 F, which covers a gas portable oven at full tilt only just.

60-90 seconds

A bake at 900 F, against six to nine minutes at 550 F

Which is the whole reason the accessory list changes. There is no time to fix anything, so the tools have to be right before the pizza goes in.

Genuinely necessary

A turning peel. The one accessory that goes from optional indoors to essential outdoors. Small head, long shaft, thin tapered edge - it lifts part of the pizza and rotates it without dragging. The turning peel roundup.

A launching peel at your oven's pizza size. Usually 12 or 14 inches. Perforated is worth more here than indoors, because burned flour on a 900 F floor smokes immediately.

An infrared thermometer that reaches high enough. A 1022 F ceiling covers a gas oven. A wood-fired floor can exceed it, and for that you need a 1400 F instrument. Emissivity matters as much as ever - a cordierite floor sits near 0.90 to 0.95, so a fixed 0.95 gun is close.

A spare floor stone. Not a luxury. Portable-oven floor stones crack - thermal shock, dropped pizzas, being carried around - and a cracked floor makes the oven unusable rather than merely worse. Match it to the oven, not to a generic size.

Worth having, not essential

A brush for the floor. Burned flour builds up fast at these temperatures and it will make the next pizza taste of it.

A cover. If it lives outside. Portable ovens are not designed to sit in the rain.

Heat-resistant gloves. Everything within a foot of the mouth is much hotter than you expect.

A wooden board to build on. The same argument as indoors: a raw base sticks to metal, and at 900 F you cannot afford a bad launch.

Marketing

Branded flour. Read the protein figure on the bag rather than the badge - 00 versus bread flour.

Dough trays sold as oven accessories. Fine products, and they have nothing to do with the oven. Buy them on their own merits and their own dimensions.

Branded cutters and serving boards. A cutter is a cutter.

Infrared thermometers bundled with an oven, unless they publish an emissivity setting and a ceiling above your oven's floor temperature. Many do not.

At 900 F you turn the pizza two or three times in 90 seconds. That is a tool requirement, not a technique preference.

Keeping the floor stone alive

The most common consumable failure on a portable oven, and mostly avoidable:

Bring it up with the oven, from cold. Never light a portable oven hard with a cold stone in it - most makers publish a ramp for exactly this reason.

Never put anything frozen on it. A frozen base on a 900 F floor is the sharpest thermal gradient the stone will ever see.

Let it cool in the oven. Not on a cold patio slab.

Brush, never wash. Water in a porous stone becomes steam.
