Start with the uncomfortable part: pizza is the weakest case for a proofer
Most of what a proofer does is hold dough at 75 to 85 F so it ferments faster and more predictably. That is exactly right for a sandwich loaf on a weekday evening. For pizza it is close to the opposite of what the dough wants.
Pizza dough gets its flavor and its handling qualities from a long, cool fermentation - typically 24 to 72 hours in a fridge at around 38 to 40 F. Warmth accelerates yeast activity and shortens that window, and a shortened window is a less interesting crust. So this roundup opens with the recommendation most of this category will not give you: if you make pizza and nothing else, buy containers and use your fridge. That is a twenty-dollar decision rather than a two-hundred-dollar one, and it makes better dough.
What we did not do
We have not baked on any of these. Every guide in this category says it tested a dozen stones; we would rather say plainly that we did not. Where a proofer genuinely earns its place
Three situations, all real, all common enough that this page exists.
A cold kitchen. Bulk fermentation at 62 F does not take a bit longer than at 75 F, it takes dramatically longer, and it takes an unpredictable amount longer because the room drifts overnight. Anyone baking in an unheated kitchen in winter is not chasing speed, they are chasing repeatability.
A live sourdough starter. A starter is a colony whose behavior is set almost entirely by temperature. Holding it at one number year round is the difference between a starter that peaks in six hours every time and one that peaks in five hours in August and eleven in February. That is the strongest case in this whole category, and it is covered from the dough side in sourdough pizza basics.
Same-day dough. If you decide at 2pm that tonight is pizza night, a warm bulk ferment is the only way to get there. It will not be your best dough. It will be dough, tonight.
What we ranked on
Published temperature range, and whether it is controlled. A device with a dial and a stated range is a different product from a mat that holds one temperature. Both have a place; only one of them is repeatable.
Capacity measured against what you actually proof. Interior dimensions decide whether a device takes a mixing bowl, a few dough tubs or only jars. This is where most of the disappointment in this category comes from.
Storage footprint. An appliance used seasonally has to go somewhere for the other nine months, and a box that does not fold is a box that occupies a cupboard permanently.
Published spec quality. The same standard we apply to stones and steels: a maker that publishes wattage, dimensions, range and warranty is telling you it has nothing to hide.
Running cost, where it can be computed. Published wattage times hours times the current US average residential electricity rate. Where the wattage is not published we say so rather than estimating it.

Those are maximum-draw figures at 18.34 cents per kWh, the US average residential price published by the EIA for June 2026. Real consumption is lower, because a thermostatically controlled heater spends most of its time off once it reaches the setpoint. Compare it with the cost of preheating an oven for one pizza and the proofer disappears into the rounding.
The question that decides this purchase is not which proofer. It is whether the dough in front of you wants to be warm at all.
The picks, and what each one is really for
The Folding Proofer is the only one here that is a proofer in the full sense: a controlled 70 to 195 F range, a 14.75 by 12.5 by 8 inch interior that takes a mixing bowl or a few dough tubs, a published 200 W draw, a published 9.5 lb weight and a three-year warranty. It also folds to 2.75 inches, which is the feature that decides whether it stays in your kitchen or migrates to the garage. The honest cons: it costs what a good stone and a good peel cost together, its interior is a domestic interior rather than a dozen-ball tray, and there is a water tray to fill and empty every time.
The Raisenne Dough Riser is a heated mat, not a box. It holds an average of about 85 F under a bowl, reaches temperature in 8 to 10 minutes in the XL size, and stores flat in a drawer. It is by far the cheapest way into this category. The cons are real and the maker is fairly open about them: one temperature with no control, the XL runs slightly cooler than the round, and no published wattage. It also heats from below only, so a deep bowl of dough sees a gradient rather than a uniform temperature.
The Sourdough Home is the odd one out and the most interesting device here, because it cools as well as heats - a published 41 to 122 F. That covers holding a starter at 78 F in a cold kitchen and holding it at 55 F in a hot one, which no other device in a domestic kitchen does. Its limitation is decisive for pizza: the interior is 7.5 by 5.1 by 5.5 inches. It holds jars. It will not proof a batch of dough balls, and buying it for that is the mistake to avoid.
The free methods, and how far they get you
The oven with the light on. The classic advice, and it has quietly stopped working in a lot of kitchens: an incandescent bulb dumps most of its energy as heat, and an LED replacement dumps almost none. If your oven light is LED, the cabinet does not warm. Test it with a thermometer before trusting it.
A cooler with a jar of hot water. Genuinely effective, genuinely free, and the temperature decays over a few hours - which is fine for a bulk ferment and poor for anything that needs holding overnight.
The top of the fridge. A few degrees above room temperature and completely uncontrolled, but a real improvement in a cold kitchen at a cost of nothing.
The fridge itself. For pizza, this is the one that matters. A cold retard is not a workaround for lacking a proofer, it is the technique the dough is asking for.
Buy nothing until you have measured your kitchen
The single most useful thing you can do before spending anything in this category is find out what your kitchen actually does. Put a thermometer where the dough sits and read it in the evening and again in the morning. Two outcomes.
If it reads 68 to 76 F and holds, you do not need a proofer - you need containers, a scale and the fridge. If it reads 62 F in the evening and 58 F at dawn, no amount of technique fixes that and a proofer or a mat is a reasonable purchase.

Do I need a proofer for pizza dough?+
Almost certainly not. Pizza dough is at its best after a long cold ferment in the fridge, which is the opposite of what a warm proofer provides. The exceptions are a kitchen that sits below about 65 F, a live sourdough starter, and same-day dough.
What temperature should a proofer be set to for pizza dough?+
If you are proofing warm at all, 75 to 78 F is the usual target for a bulk ferment, and the dough then goes cold for its long rest. Higher settings ferment faster and give you less control, not more.
Is the oven-with-the-light-on trick still valid?+
Only if the bulb is incandescent. An LED oven lamp produces very little heat, so the cabinet stays at room temperature. Put a thermometer in and check before you rely on it.
How much does a proofer cost to run?+
Very little. At the published 200 W maximum draw and the US average residential rate of 18.34 cents per kWh, four hours costs about 15 cents - and that assumes the heater never cycles off, which it does.
Can a proofer hold a batch of pizza dough balls?+
The folding proofer can take a few tubs or a bowl in its 14.75 by 12.5 inch interior. The jar-sized units cannot. If you are proofing eight or more balls at once, the answer is trays and shelf space rather than an appliance.
